Erdnuss-Karamell auf dem Kuchen

I had so much work to do there was hardly time to bake. But I baked some chocolate cupcakes last sunday. Unfortunately they didn't turn out to be real cupcakes as they were very flat. So my idea to fill them with butter cream was obsolete. I presented a few cupcakes with amarena cherries. It tasted really good but I still had many small chocolate cupcakes with the density of brownies left. So I decided that I wouldn't bake the brownie cake for this weeks "Tuesdays with Dorie". Tammy of Wee Treats by Tammy chose Caramel Peanut topped Brownie Cake. So the only thing I had to prepare was the peanut caramel topping.
As always corn syrup wasn't available in Germany so I took honey. Having some experience making caramel I knew that I would have to be patient. Good caramel takes its time but you are compensated by a flavourful, golden caramel. The salted peanuts added a little salty twist.
I poured the hot caramel over the "left over" cupcakes. It was delicious! Then I lightly oiled aluminium foil on a baking sheet an poured the rest of the caramel onto the baking sheet. When it hardened I cut in small pieces. Nice candy!
